Cooking in Newfoundland

I am taking a one year sabbatical away from the business on the west coast . Right now I am in Placentia Newfoundland working at Philips Cafe. A very different place from Vancouver Island,  Newfoundland almost feels like another country. I have learned how to make Cod Chowder, Cabbage soup and gourmet sandwiches. The owner who is a pastry chef makes all the bread, and many baked goods (White bread is traditional here) The tourists support the healthier food but we do get some Newfoundlander s who especially love the Fish cakes. I may teach an in home class to a few people who are interested in vegetarian and healthier cuisine, there is some hope for the land of unhealthy food. Chef Sonja’s chillin’recipes for those hot summer days are yours to discover– the focus in this class will be on raw cuisine. Some of the recipes are a Raw Garden Ginger Energy Soup, raw zucchini humus, Sonja’s raw nut pate, mango banana custard and a raw fig & apple pie. There will be some hands on in this class. The flavors of Thailand are waiting for you to discover. This is my most popular class. I will not be teaching this class for another 11/2 years. Come and learn a Thai Veggie and Tofu Curry, Peanut Sauce and a Pad Thai stir fry. This class is dairy and gluten free. Bring to go containers.

Cooking for Food Sensitivities

 Do you, or does someone in your family have an allergy to certain foods if so then this class is for you. Even if you do not have allergies these recipes are so yummy you will enjoy this class. We will learn to make recipes without using dairy, eggs, gluten or sugar. Some of the recipes are Almond Flour Muffins, Yam & Walnut Cookies, a dairy free Cream Soup and a Tofu Quiche. Enjoy a meal at the end of the lesson, and bring some to go containers.

Come and experience some of the sumptuous Middle Eastern recipes that chef Sonja has collected. Learn how to make Falafel s (baked) from scratch including complementary dips and sauces like baba ganoush, tahini sauce and a Lemon lentil humus. As a side dish Sonja will teach a Quinoa Tabouli salad, this is a modern adaptation of a traditional recipe. Bring your appetite and enjoy a meal.
